I used to train at a groomers for a year and a bit but no just do it in my free time,,,If you have a stubborn dog then i find not looking at them and holding there head up with the support of a thin lead tyed to a hook and with a firm but kind word works and if the dog carrys on maybe placing a thin lead under the belly and prevent them from sitting down,,,when they know that they can sit and be a pain they should behave,,,
Another tip for restless dogs is if they are a food orientated dog then holding a treat in your hand and holding it just out of reach will encourage to stand and also good for those underneath places on the dog,,,use a small toy if your dog is Toy orientated.
