After years of serving the dairy goat world and becoming completely jaded at people's insistence on ignoring, bending, breaking the rules and regulations, I vowed never again to participate in any club (other than pay a subscription). Wrong! Here I am trundling off to attend the East Coast Gundog Club's annual general meeting, bearing this cake (one of my absolute favourites) which I prepared earlier. Please believe me when I say that it is one of the easiest of cakes to make and is truly delicious. Serve warm or cold with lashings of whipped cream.
Spicey Pear Cake
3 firm, medium sized pears peeled, cored and thinly sliced. You can use any fruit you like, apples work really well too. Tried persimmons but it just didnt work as well as I wanted it to!
150g butter, melted
2 large eggs
1 teaspoon vanilla essence
1 and a half cups white flour
1 teaspoon baking soda
2 tablespoons raw or demerara sugar
a good half a teaspoon of cinnamon
Butter a 20cm cake tin. Beat the sugar, eggs and vanilla with the melted butter, then beat in the flour and baking soda. The mixture is very smooth but quite firm. Spoon half of the mix into the tin, and top evenly with the pears. Cover with the rest of the mix and smooth the top off with a spatula moistened with cold water. Combine the cinnamon and sugar and sprinkle over the top. Bake at 160C being sure to check the cake after 25 minutes as it can become overcooked very quickly.
I also add chopped up chocolate if I have some.
