Hare to me is the ultimate!!! even beats venison. If you cannot rip their ears then they will be aged and if male quite strong which is an acquired taste for some. Either way I think it is fabulous; no fat to speak of. No wonder once an upon only the titled were permitted to hunt and eat it!!
